Butter two 8-inch round cake pans; dust with cocoa, tapping out excess. Line bottom of each pan with a round of parchment paper; set aside. In a medium bowl, whisk together flour, cocoa, baking powder, baking soda, and salt; set aside.
2.In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy. Add eggs and yolks, one at a time, beating well after each addition; beat in chocolate and vanilla. With mixer on low, alternately add flour mixture in three parts and buttermilk in two, beginning and ending with flour mixture.
3.Divide batter between prepared pans; smooth tops. Bake until a toothpick inserted in center of a cake comes out clean, 40 to 45 minutes. Cool in pans 15 minutes; run a knife around edge of each pan, and invert cakes onto a wire rack to cool completely.
4.Set a rimmed baking sheet upside down on a work surface. Place one cake on sheet, and spread top with 1/3 of ganache. Place second cake on top, and spread remaining ganache over top and sides of cake. Using two wide metal spatulas, carefully transfer frosted cake to a serving platter.

Ganache Frosting
Ingredients
2 cups heavy cream
1/2 cup confectioners' sugar
1/8 teaspoon salt
1 pound bittersweet chocolate, roughly chopped
Directions
1.In a large saucepan, bring 2 cups heavy cream, 1/2 cup confectioners' sugar, and 1/8 teaspoon salt to a boil. I thought they were like hot fudge brownies

Chocolate Mud Cake
(recipe from Kristy Johnson) I got if from Wendi
1 c. all-purpose flour
2 tsp. baking powder
6 T. butter
2 oz. semisweet chocolate (or 1/3 c. chocolate chips)
1 c. sugar (2/3 c. and 1/3 c.; added separately)
3 Tbs. plus 1/3 cup Dutch-processed cocoa (I just used regular cocoa powder)
1 Tbs. vanilla exxtract
1/4 tsp. salt
1/3 c. milk
1 egg yolk
1/3 c. brown sugar
1 1/2 c. hot water
whipped cream or ice cream

Step 1 Coat the inside of a 2 1/2 to 5 quart slow cooker with cooking spray. (Note: the cake's cooking time and final appearance will vary depending on your crock's size.)

Step 2 Whisk together the flour and baking powder in a medium bowl and set aside. In a large bowl, melt the butter and chocolate in the microwave or over a pan of simmering water and mix well.

Step 3 Whisk in the 2/3 c. sugar, 3 Tbs. of cocoa, vanilla extract, salt, milk, and egg yolk. Add the flour mixture and stir until thoroughly mixed.

Step 4 Pour the batter into the slow cooker and spread it evenly. In a medium bowl, whisk together the remaining sugar, cocoa, and hot water until the sugar is dissolved.

Step 5 Pour the mixture over the batter in the slow cooker. Cover and cook on high for 1 to 2 hors, depending on the size of the crock pot.

Step 6 Even when done, the cake will be very moist and floating on a layer of molten chocolate, but you'll know it's ready when nearly all of the cake is set and the edges begin to pull away from the sides of the pot. (As you check, try not to let the condensed steam from the lid drip onto the cake.)

Step 7 When it's done, turn off the power and remove the lid. Let it cool for 25 minutes, then serve it in bowls topped with whipped cream or ice cream. Makes 6 to 8 servings.

Sprite Chicken

From Robyn Smith

1 12 oz. Chicken Broth (you can make your own with 2 cups water and some chicken bullion)

Cook the onion and butter until tender, stir in flour, salt ,pepper and sage. Add chicken broth and milk mix well until it starts to thicken. Add vegetables and chicken and pour in to pie shell. Cook 1 hour @350. Let stand a while before serving

Pie Crust (not really a recipe but some tips)

Butter
Sifted Flour
Salt
Very cold water

I mix the butter salt and the flour with a pastry cutter. The trick is that it's not to dry with flour so add the flour slowly to the butter and don't add to much. I like it's to all stick together pretty good. I make a well with the flour and butter mixture and add very very cold water. Not to much water only a few tablespoons. Divide dough and roll out onto a floured surface.

Easy Cordon Bleu

Easy Cordon Bleu
From Jenn Reid

Chicken tenderloinsPackage
bacon
Sour Cream
Cream of mushroom soup
Salt and pepper

Wrap chicken with bacon. Add the cream, the zest from 2 lemons, the juice of 2 lemons, 2 teaspoons of salt, and 1 teaspoon of pepper. Bring to a boil, then lower the heat and simmer for 15 to 20 minutes, until it starts to thicken.Meanwhile, cut the broccoli in florets and discard the stem. Cook the florets in a pot of boiling salted water for 3 to 5 minutes, until tender but still firm. Drain the broccoli and run under cold water to stop the cooking. Set aside.Bring a large pot of water to a boil, add 1 tablespoon of salt and the pasta, and cook according to the directions on the package, about 12 minutes, stirring occasionally. Drain the pasta in a colander and place it back into the pot. Immediately add the cream mixture and cook it over medium-low heat for 3 minutes, until most of the sauce has been absorbed in the pasta. Pour the hot pasta into a large bowl, add the arugula, Parmesan, tomatoes, and cooked broccoli. Cut the last lemon in half lengthwise, slice it 1/4-inch thick crosswise, and add it to the pasta. Toss well, season to taste, and serve hot.

Southwest chicken salad

4 breasts of chicken, cooked then sliced
1 tablespoon olive oil
1 head romaine lettuce, chopped
small1 15-ounce can of black beans, drained and rinsed
1 ear of corn, cut off kernels (can use frozen or can corn)
1 tomato, chopped
1 avocado, diced
1/2 cup red onion, chopped fine
1/4 cup jack cheese
1/4 cup cheddar cheese
1/4 small jicama, diced
Lemon-pepper
crushed tortilla chips
cucumbers (optional)
Buttermilk Salsa Dressing (see below)
Pound the chicken with a meat tenderizer. Add the reserved liquid and cover to cook on low until the cabbage is wilted but still green. Serves 8-10 **Variation oven recipe. Instead of cooking it in the crock pot I usually roast it in the oven (double wrapped in tin foil) at 250 for 5-6 hours. Serve on rolls.
