KK Doughnuts



This recipe comes up several places if you search for it.This is where I got it. I made them this weekend and they were really good.


Ingredients:

Raised doughnuts:

2 pkgs. regular or rapid rise yeast

1/4 cup warm water (105-115 degrees)

1 1/2 cups lukewarm milk (scalded then cooled)

1/2 cup sugar

1 tsp. salt

2 eggs

1/3 cup shortening

5 cups all-purpose flour They will be fluffier if you use half cake flour but both works.

Vegetable oil


Creamy glaze or chocolate glaze


Creamy glaze:1/3 cup butter

2 cups powdered sugar

1 1/2 tsp. vanilla

4-6 tbsp. hot water


Chocolate glaze:

1/3 cup butter

2 cups powdered sugar

1 1/2 tsp. vanilla

4-6 tbsp. hot water

4-oz milk chocolate or semi-sweet chips



Directions:Raised Donuts Dissolve yeast in warm water in 2 1/2-quart bowl. Add milk, salt, eggs, shortening and 2 cups flour. Beat on low speed scraping bowl constantly, 30 seconds. Beat on medium speed scraping bowl occasionally, 2 minutes. Stir in remaining flour until smooth. Cover and let rise in warm place, until double, 50-60 minutes. (Dough is ready when indentation remains when touched.) Turn dough onto floured surface; roll around lightly to coat with flour. Gently roll dough 1/2-inch thick with floured rolling pin. Cut with floured doughnut cutter. Cover and let rise until double, 30-40 minutes. Heat vegetable oil in deep fryer to 350 degrees. Slide doughnuts into hot oil with wide spatula. Turn doughnuts as they rise to the surface. Fry until golden brown, about 1 minute on each side. Remove carefully from oil (do not prick surface); drain. Dip the doughnuts into creamy glaze set on rack then when slightly cooled spread chocolate glaze on top. Can dip in sprinkles or other toppings after chocolate if desired.Creamy glaze Heat butter until melted. Remove from heat. Stir in powdered sugar and vanilla until smooth. Stir in water, 1 tablespoon at a time, until desired consistency.Chocolate glaze:Heat butter and chocolate over low heat until chocolate is melted; remove from heat. Stir in powdered sugar and vanilla until smooth. Stir in water 1 tablespoon at a time, until desired consistency.
Makes: 2-3 dozen doughnuts

Crockpot Brownies

These are so yummy!! I thought they were like hot fudge brownies

Chocolate Mud Cake
(recipe from Kristy Johnson) I got if from Wendi
1 c. all-purpose flour
2 tsp. baking powder
6 T. butter
2 oz. semisweet chocolate (or 1/3 c. chocolate chips)
1 c. sugar (2/3 c. and 1/3 c.; added separately)
3 Tbs. plus 1/3 cup Dutch-processed cocoa (I just used regular cocoa powder)
1 Tbs. vanilla exxtract
1/4 tsp. salt
1/3 c. milk
1 egg yolk
1/3 c. brown sugar
1 1/2 c. hot water
whipped cream or ice cream

Step 1 Coat the inside of a 2 1/2 to 5 quart slow cooker with cooking spray. (Note: the cake's cooking time and final appearance will vary depending on your crock's size.)

Step 2 Whisk together the flour and baking powder in a medium bowl and set aside. In a large bowl, melt the butter and chocolate in the microwave or over a pan of simmering water and mix well.

Step 3 Whisk in the 2/3 c. sugar, 3 Tbs. of cocoa, vanilla extract, salt, milk, and egg yolk. Add the flour mixture and stir until thoroughly mixed.

Step 4 Pour the batter into the slow cooker and spread it evenly. In a medium bowl, whisk together the remaining sugar, cocoa, and hot water until the sugar is dissolved.

Step 5 Pour the mixture over the batter in the slow cooker. Cover and cook on high for 1 to 2 hors, depending on the size of the crock pot.

Step 6 Even when done, the cake will be very moist and floating on a layer of molten chocolate, but you'll know it's ready when nearly all of the cake is set and the edges begin to pull away from the sides of the pot. (As you check, try not to let the condensed steam from the lid drip onto the cake.)

Step 7 When it's done, turn off the power and remove the lid. Let it cool for 25 minutes, then serve it in bowls topped with whipped cream or ice cream. Makes 6 to 8 servings.

Sprite Chicken

From Robyn Smith

1 12 oz. Can Sprite
1 Cup Soy Sauce
1 T Minced Garlic
4-8 Boneless Skinless Breasts, thawed & rinsed

Mix Sprite Soy Sauce & Garlic together & marinade chicken for 24 hours.BBQ chicken as normal, brushing chicken with marinade when flipped.

Banana Bread

1c. sugar
1/2 shortening
2 eggs cream together
3 very very ripe bannans
1 tsp. Baking soda
2c. Flour
1/2 t salt
(1/2 cup nuts optional)


Bake at 350 for 45 min check if done by putting toothpick in the middle if it comes out clean it's done.

Homemade Pasta

2 1/3 c. Flour
1/2 t salt
2 beaten eggs
1/3 c. water
1 t Olive oil

Mix dry ingredients then add wet. Mix well and roll out on floured surface. When rolled out fairly thin slice with knife to make long noodles.

I boil a large pot of water and add the noodles, chicken bullion, Cooked Chicken breast cooked and cubed, I add some sage and salt and pepper. It's pretty plain but my family likes it.

Raisin Cookies

3/4 c. Marg.
1 1/2 c. Brown sugar
2 eggs
1tsp. vanilla
1/2 tsp Baking Powder
1/2 tsp. nutmeg
1 tsp cinnamon
2 Tbls milk
1/2 tsp soda
2 c. flour (or till stiff)
1c. raisins

Bake 350
till done

Snickerdoodles

2 3/4 c. flour
2 tsp. Cream of tarter
1 tsp. Baking soda
1/2 tsp. salt
1c. shortening
1 1/2 c. Sugar
2 eggs

Cream sugar and shortening all other ingredients. Roll in combined sugar and cinnamon.
Bake 8-10 mins at 400.

Apple ,Peach or Pear Crisp

1/2 C. Oats

1/2 C. Brown Sugar

1/4 C. Marg.

1/4 C. flour

1/2 tsp. Cinnamon

dash of salt



Combine until crumbly



Top over 5 C. of fruit in an approx. 10x6 dish

Cook 40 min at 350

Fresh Salsa

2 Jalapeno peppers seeded

1/8 bunch parsley
2 Tbsp fresh cilantro
1 1/3 Tbsp fresh basil
1 large can diced tomato
1 1/8 cup Anaheim chili powder
2/3 cup red onion coursely chopped
1 tsp onion powder
3/4 tsp black pepper
3/4 tsp chili powder
1/2 Tbsp granulated garlic
3/4 tsp cumin
3/4 tsp paprika
3/4 tsp salt
1 Tbsp Apple Cider Vinegar

Chop and mix all together.

Sugar Cookies

1 cup white sugar
1/2 cup butter
1 egg
cream together

1t Vanilla
1/2 cup sour cream
Mix

3 1/4 cup flour
1/2 t salt
1 tsp. Baking soda
Mix

Don't chill, Bake 400 for 7 mins

Orange Slush



46oz pineapple juice

12 oz frozen orange juice

2 litters of sprit added just before serving

Apple Dip

16 Individually wrapped caramels unwrapped
¼ Cup Water
1 (8 oz.) Pkg. Cream Cheese
½ Cup Brown Sugar

In a medium saucepan over medium-low heat melt caramels in water, stirring frequently. Remove from heat. In a medium bowl, cream together cream cheese and sugar. Fold in caramel mixture. Serve immediately. Goes great with Granny Smith apples cut into boats.

Chicken Pot Pie

A family favorite

Pkg. of frozen vegetables or my kids love carrots so sometimes I make it with fresh cut up carrots.
1 small chopped onion
1/4 c. butter
1/3 c. flour
1/2 t. sage
1/2 t. salt
dash pepper and parsley
4 chicken breasts boiled and shredded or you can use a can of canned chicken.
3/4 c. milk
2c. Chicken Broth (you can make your own with 2 cups water and some chicken bullion)

Cook the onion and butter until tender, stir in flour, salt ,pepper and sage. Add chicken broth and milk mix well until it starts to thicken. Add vegetables and chicken and pour in to pie shell. Cook 1 hour @350. Let stand a while before serving


Pie Crust (not really a recipe but some tips)

Butter
Sifted Flour
Salt
Very cold water

I mix the butter salt and the flour with a pastry cutter. The trick is that it's not to dry with flour so add the flour slowly to the butter and don't add to much. I like it's to all stick together pretty good. I make a well with the flour and butter mixture and add very very cold water. Not to much water only a few tablespoons. Divide dough and roll out onto a floured surface.

Sour Cream
Cream of mushroom soup
Salt and pepper

Wrap chicken with bacon. Mix sour cream and soup, add salt and pepper to taste. Cover chicken with sauce. You can add cheese on top also if you want. Bake at 350 about forty minutes or until chicken is no longer pink in the middle.

Slow Cookers BBQ Pulled Pork

1 pkg. McCormick Seasoning
3 lbs. boneless pork shoulder roast
1/2 c. ketchup
1/2 c. packed brown sugar
1/3 c. cider vinegar

Mix seasoning, ketchup, brown sugar, and vinegar. Pour over pork. Cook 8 hours on low, 4 hours on high. Shred pork with forks, mix and heat with sauce before serving

Savory Roasted Turkey in a Crockpot

1 Tbs. Italian seasoning
2 tsp. seasoned salt
1 tsp. dry ground mustard
1 tsp. garlic powder
1/2 tsp. black pepper
1 turkey breast with bone, no legs (about 7-9 lbs.) fresh or frozen
2 bay leaves
2 stalks celery
1 onion,
quartered
1 small orange, quartered
1-2 Tbs. olive oil

Combine first 5 ingredients; set aside. Wash turkey breast and remove giblets. Place the turkey breast in the crock-pot. Sprinkle 2 tsp of seasoning mixture inside the turkey breast cavity. Stuff bay leaves, celery stalks, onion, and orange inside turkey. Turn over. Rub oil and remaining seasoning mixtures over entire surface of turkey. Replace lid. Bake 4-6 hours on low or until meat thermometer reads 180 F in breast. Serves 8-10. **You can use 2 chickens instead of turkey breast and split the ingredients between them. Potatoes and carrots can be added to complete the meal. The leftovers make a wonderful turkey noodle soup with just a hint of orange.

Salsa Crock Pot Chicken

4 Chicken Breasts
1 c salsa
1 can cream of chicken soup

Cook on high for 4 hours or on low for 7-8 hours.
During the last 10-15 minutes: Break up the chicken and then add 1 c minute rice
Put on tortillas and add cheese, sour cream etc.

Carmel Apples

Here's the recipe for the carmel. After coating the apple, you can dip in chocolate, nuts, chopped snickers, crushed oreos....the possibilities are endless!
Caramel:
2 cups brown sugar, packed
1 cup karo syrup
1 can sweetened condensed milk
1 stick of butter (equals 1/2 cup butter--margarine is not as good in this recipe)
Mix all together in a big pot. Keep it on medium to high heat. Bring to a boil, stirring constantly so it doesn't burn. Cook it to a soft ball stage. Ross carmel in a ball and set it on the counter. If it stays together then it is done. If it starts to fall out of a ball its not there yet
This recipe is also good for popcorn!

Breakfast Casserole

12 Eggs well beaten
9 slices white bread
4T butter cubed
3 cups milk
6 green onions
1/4 cup bell pepper
2 T chopped pimento
2 lb Pork Sausage
2 Cups Cheddar Cheese
1t Salt
1/4 t pepper

Cook the pork sausage and pat off the extra grease. Combine and blend. Then pour into a 9x13 pan. Refrigerate over night and bake 300 for ? I can't remember I think a little over 1 hour.

I made this for C.C.'s baby blessing. We had church in the morning. I made it the night before and put it in the oven before we went to church. It was nice to come home to this and fruit already cut up and good old chocolate milk!

Sweet and Sour Chicken

Sweet & Sour Chicken

3 Lbs. Chicken breasts
1 tsp. Garlic salt
½ tsp pepper
1 egg beaten
4-6 Tbs. Flour
3/4 cup sugar
½ cup vinegar
½ cup chicken stock
3 ½ Tbs. Catsup
1 Tbs. Soy sauce

Combine flour, garlic salt and pepper. Dip chicken in egg and then coat chicken with flour mixture and brown in hot oil. Place in baking dish. Cover with following sauce: Mix sugar, vinegar, chicken stock, catsup and soy sauce in sauce pan and heat. Pour over chicken. Bake uncovered for 1 hour at 325∘ turning once. Serve with rice.
